Spinach makes up its own genus in the Amaranth family.
Spinach is an annual, herbaceous plant.
There are many varieties of spinach.
Matador in an old variety to be grown in spring or autumn and is also suitable for overwintering.
Spinach grows deep roots so it is ideally suited as a plant to be grown before or after a main crop. This is because its long, steep roots loosen up the soil.
You can sew the next plant between the spinach plants, even before the spinach has been completely harvested, as spinach gets on well with almost all vegetables.

It needs a sunny to partially shaded location with good, loose garden soil.

Beetroot, Chard, Turnips

Plants that are well suited for next year cultivation:

Leeks, Strawberries, Sweet corn

The following plants should not be planted in the following years:

How many years: Not to plant:
1 – 2 year(s) Spinach

Winter varieties should be protected from frost (i.e. negative temperatures without snow cover) by earthing up the soil and and/or protecting with brushwood and foliage.

It is possible to grow this in batches at intervals of time.
When sowing, press the seeds firmly on the soil to get good contact and increase the chances of germinating successfully.
Water regularly.

Diseases: Fungal diseases (moulds and sac fungi)
Pests: Caterpillars, leaf miner larvae, black bean aphids.

Regularly harvesting encourages the plant to grow.
If the small hearts are left, then it will be possible to harvest up to four times each year.
Caution:
As soon as the spinach flowers, you should stop harvesting as a high concentration of nitrate makes it taste quite bitter.

Spinach can be kept in your vegetable cooler for two days at most.
Frozen, it will keep considerably longer.

Generally, spinach is served cooked but it can also be eaten raw, especially young spinach leaves are excellent as a crunchy addition to salads.
